Cabbage Roll Soup


I call this a cabbage roll soup as the main ingredients include beef, rice, cabbage and tomato sauce. What you add after that is up to you. Load it up with more veggies and you have a hearty healthy soup perfect for a snowy day.


Cabbage Roll Soup
A hearty soup for a cold winter's day. I double my batch and freeze some for lunches.

  • 1 lb grass fed ground beef (can use ground pork, turkey or chicken)
  • 4 cups of stock or water
  • 1 can tomato sauce
  • 3 cups chopped cabbage
  • 1 small onion chopped
  • 1 cup of white or brown rice or Quinoa
  • any other vegetables - carrots, celery, diced tomatoes
  • 1 bay leaf
  • thyme (fresh or dried)
  • parsley (fresh or dried)
  • basil (fresh or dried)
  • salt and pepper
  1. In a large stock pot, start browning your meat. Season with some salt and pepper.
  2. While meat is browning, add your cut up onions, cabbage and other vegetables.
  3. Continue to cook until meat is completely brown and vegetables are soft.
  4. Add your stock or water, tomato sauce and herbs.
  5. Let simmer for 1 to 2 hours or more. Make sure you taste and add seasonings if desired.
  6. I add the rice about 30 minutes before serving.
  7. Garnish with some fresh parmesan and enjoy!
